At HealthWealth, we believe it can. Founded by Dr. Veronica Allende, an educator, lifelong learner, and home cook, HealthWealth began as a way to make low-carb eating feel approachable and sustainable for real life.
Growing up, Veronica saw how prediabetes and diabetes quietly became part of family life. That experience inspired her to reimagine traditional dishes in a way that honors cultural favorites while feeling more balanced and supportive of everyday health.

Dr. Veronica Allende
Veronica is an experienced education professional who believes growth in both learning and living begins with what we nurture daily. She is the Founder & Creator of HealthWealth and Collective Learning, two platforms designed to make healthy living and lifelong learning accessible to everyone.
Born and raised in Brooklyn, New York, in a lively Puerto Rican household, Veronica grew up surrounded by family, culture, and home-cooked meals. Her mother, Alicia, taught her that cooking is both love and legacy - a way to stay connected to those who came before us.
As diabetes became more common in her family, including her mother, Veronica started exploring how small changes to traditional recipes could support blood-sugar balance without sacrificing flavor or tradition. That curiosity grew into HealthWealth, a space for recipes that feel both nourishing and familiar.
Veronica’s approach to cooking is also deeply inspired by her husband’s Moroccan heritage, where meals are prepared with farm-fresh ingredients, bold spices, and a love for sharing food at the table. The balance of these two cultures, Puerto Rican warmth and Moroccan flavors and vibrancy, inspires wholesome, flavorful recipes rooted in family and tradition.
When she’s not testing new dishes or reimagining family favorites, Veronica brings together her love of teaching, writing, and food to inspire others to eat well, feel better, and live fully.
Dr. Allende shares the kitchen with her mother, three aunts, and a cousin.
