1/4 cup celery, finely chopped
2 medium potatoes, peeled and chopped

How to make Comforting Chicken Stew
Cut the chicken into 8 evenly sized pieces.
Raw chicken cut into evenly sized pieces and placed in a large soup pot with water.
Place the chicken in a large soup pot or Dutch oven along with water, garlic, onion, salt, pepper, chopped tomatoes, and parsley, and gently stir.
Garlic, onion, salt, pepper, tomato, and parsley are placed in the pot.
Cover the pot with a lid and simmer over low heat for about 30 minutes.
The pot is covered and the stew will simmer for 30 minutes.
Add the celery, potatoes, carrots, and bay leaf, and gently stir. Continue cooking, covered, for another 15 minutes, or until the chicken and vegetables are tender.
